Applesauce Muffins

This is one of our favorite snacks & it should come as no surprise that its from my favorite recipe book 'Deceptively Delicious' by Jessica Seinfeld. Not only is it tasty and sweet but its healthy and full of surprises like the butternut squash you wouldn't believe was hidden inside. Those picky eaters don't stand a chance against these bad boys!

Applesauce Muffins


The Sprinkle on Top                                                           

2/3 cup oats

¼ cup packed brown sugar

1 tsp cinnamon

2 tbsp melted butter


The Muffin Below

1 ½ cups flour

1 cup oats

1 tsp baking powder

½ tsp baking soda

½ tsp cinnamon

1 cup unsweetened applesauce

½ cup milk

½ cup pureed butternut squash

½ cup packed brown sugar

¼ cup vegetable oil

1 egg



1) Preheat oven to 400F & line muffin cups

2)Prepare the Sprinkle on Top by combining its ingredients together

3)In a big mixing bowl combine the flour, oats, baking powder, baking soda, & cinnamon

4)In a different bowl combine the applesauce, milk, squash, sugar, oil, & egg

5)Slowly add the first bowl of dry good to the second bowl while stirring until just moistened

6)DON’T OVERMIX! Lumpy is good!

7)Pour into muffin cups & follow up with the Sprinkle on Top

8)Bake for approx. 18-20 min
