Mexican Rice with Cheddar

This one was a new one for us and Id say it was a pretty yummy hit. I got it from the All You Need is Cheese magazine a few years ago. This recipe actually has a super easy to follow video that you can visit at allyouneedischeese.ca/mexicanrice. You can also find other really delicious and cheesy meals to try at www.dairygoodness.ca.

The best part is that we had plenty of it left over to make quesadillas with or even a variation of burrito. You could also use the left overs (if you have any that is) as a chunky sauce for some noodles, just add some tomato sauce or even a can of tomato soup (Heinz is the best brand for sauces).

Mexican Rice with Cheddar

Ingredients

1 tbsp. butter

2 cloves of garlic, 1 large chopped onion, & 1 diced bell pepper

1 lb. lean ground (insert desired meat here)

½ tsp ground cumin, 1 tsp chili powder

1 can rinsed and drained of preferred kidney beans, 1 small can of corn kernels  

1 cup rice

1 ½ cup salsa, ½ cup water

2 cups shredded cheese

 

Directions

1)In a very large saucepan, melt the butter & sauté the garlic, onion, pepper, & ground meat

2)Add spices & continue to sauté for another 2 minutes or so

3)Stir in the kidney beans & rice, cook for 3 minutes more

4)Add in the corn, salsa & water

5)Bring it to a boil then simmer on low for about 20-25 minutes

6)Dish it out & top it off with as much cheese as your heart desires.
